GREELEY, Colo., July 26 /PRNewswire-FirstCall/ -- Pilgrim's Pride Corporation (NYSE: PPC) said it has received formal approval from the U.S. Department of Agriculture to resume exporting chicken products to Russia. The company said USDA has approved exports to Russia from Pilgrim's processing facilities in Boaz, Ala., Russellville, Ala., and Dallas, Texas. The Alabama plants already have begun packing product for Russia and Pilgrim's said it expects to resume shipments shortly. The Dallas plant will resume production today.

Still, the labeling rule is welcome news for consumers who base their decisions in part on where foods were raised or grown.

If you ever been envolved in a riot or been a victim of the police using poor crowd control, you've sampled the effects of capsaicin in the form of pepper gas. I listed pepper spray on the scale, just to give a reference of it's Scoville heat units, as compared to what many consider to be to the hottest pepper in the world, the habanero. Its close cousin, the Scotch bonnet, is used in a lot of African and Carribean cuisine such as jerk chicken. The tabasco pepper, mostly grown and processed in Avery Island, Louisiana, is my personal favorite. It lends its name to Avery Island's largest export, Tabasco sauce. I didn't list chipotle peppers which are actuary smoked jalapenos. The smoking process concentrates the capsaicin, which places the Chipotle slightly hotter than a serrano pepper.

Now 27-year-old [Benson] has over 700 recipes under his belt, ranging from chicken lasagna to seafood gumbo, that use only fresh, non-processed and, as much as possible, organic and hormone-free foods. On a recent Monday, lunch is turkey stew, brown rice pilaf, and steamed zucchini. But the hardest part of Benson's job may be to cook foods that the students will like and that are nutritious.
When asked about the turkey stew, both Brandon Bacon and Domonique Grant, two seventh graders at the Promise Academy, had only the highest accolades. Neither had even seen Swiss chard or cabbage before eating in Benson's cafeteria. Brandon compared the taste of Swiss chard to collard greens, a vegetable he likes.
