Finishing the soup: Pull the thick center vein from each sorrel leaf. You should end up with a little more than 2 cups of firmly packed leaves. Put half of the sorrel and half of the chives in the container of a blender. (You can use a food processor instead, but the soup will not be as smooth.) Pour half of the hot soup over the greens and cover. Hold the lid on with a dry towel and turn the blender on at low speed so that the soup doesn't splash up, then gradually increase the speed to high and blend until very smooth. Butter 13x9x2-inch glass baking dish. Whisk eggs, milk, salt, and pepper in medium bowl. Arrange half of bread in bottom of prepared dish with bases of triangles facing in same direction. Scatter half of sausage, then half of plums over bread. Arrange remaining bread in dish with triangles facing in opposite direction. Scatter remaining sausage and plums over. Pour milk mixture over; press on bread to submerge. Cover; chill overnight.
