PRESQUE ISLE, Maine -- After eating a potato-plentiful lunch that she deemed both "delicious and nutritious," U.S. Sen. Susan Collins was honored Monday afternoon for her work in assuring that schools across the nation are free to serve potatoes to students.
During a luncheon at The Crow's Nest restaurant that included both a baked potato bar and potato leek soup, Collins was honored by the Presque Isle-based Maine Potato Board and more than 30 potato growers, shippers and other industry officials. At Wood Creek, where the farmers process 400 head of Angus and Hereford cattle each year, Morgan opts to raise his animals on pasture. The word "pasture" is important, he explains, because "you can say something's grass fed and still feed it hay in a barn." Washoku can be translated as "harmony of food." In broad terms, it refers to any food that's traditionally Japanese. In culinary applications, it's a way of thinking about what and how to eat. The philosophy rests on a set of principles in fives that take into account color, taste, method of food preparation, diners' senses and attitude toward the dining and cooking experience. As Japanese food authority Elizabeth Andoh points out, the concepts are easily applied to Western foods, as in the recipe and accompaniments below.

HUNTINGTON - Sheila Pennisten simmered a pot of potatoes in chicken stock while her new acquaintance Pola Maniskas sauteed a fragrant pot of chopped leeks, celery, onions and carrots. I've been thinking about leeks lately. Nancy and I have never grown them and rarely eat them, except when visiting friends and occasionally out at restaurants.
But a couple of months ago Nancy suggested we should try them. We have had good luck with potatoes in recent years and a potato and leek soup sounds good. Plus leeks would go well in a plate of roasted root vegetables that we have had occasionally over the past few years.
