PRESQUE ISLE Pressure against proposed changes to nutritional guidelines is causing federal officials to take another look at what foods they will recommend schools across the nation serve their students.
The increased scrutiny could improve the role of the potato in the National School Lunch and Breakfast Program. Members of Maines congressional delegation have expressed concerns that the potato has been unfairly targeted by federal officials.

Family Sunday
Take the family outside for grilled chicken. Serve it with avocado potato salad (see recipe). While the grill is hot, add some zucchini (sliced lengthwise) and bell pepper halves to round out the plate. Add crusty rolls. For dessert, buy or make blueberry cobbler and top it with fat-free vanilla ice cream.

Years ago, mama's Sunday potato salad always held a diced apple and a hard cooked (boiled) egg or two, and was dressed with a creamy, homemade mayonnaise for a Southern note. And today when I make potato salad, I often jazz up commercial mayonnaise with a squeeze of lemon juice and a little grated lemon or orange rind, adding a fresh zest.
When making a potato salad, firm textured red skin potatoes, fingerlings and Yukon potatoes are best with a mayonnaise dressing, while more crumbly potatoes such as the white rounds and yellow varieties easily absorb vinaigrette dressings.

Potatoes arent bad for you. But the ways most Americans eat them as french fries and chips are. The way to resolve this problem which is currently at the center of a debate over revised rules for school lunches is not to ban or strictly limit potato consumption, but to encourage healthier preparation of the tuber. Another avenue is to provide incentives for schools to get more food from local sources.
The U.S. Department of Agriculture is in the process of updating its guidelines for school lunches for the first time in 15 years. Part of the rewrite proposes to limit the serving of potatoes, among other foods.

This notice announces the intention of the National Agricultural Statistics Service (NASS) to reduce the currently approved information collections for rice and potato stocks that are currently approved under OMB <greek-i> 0535-0007. Under the current OMB approval the Potato Stocks Survey is conducted on a monthly basis from December through June of each year. Under this reduction NASS plans to discontinue the collecting and publishing of potato stock data for the months of January, March and May. In the four remaining months (December, February, April and June) there will be no changes to the surveys or the publications.
