  • Once April arrives, nature has usually gone from teasing us with hints of spring to exulting us with actual evidence of the season's arrival. Flowers and trees are blooming, birds are chirping and the markets showcase the season's glorious harvest. Anytime a recipe includes the word "primavera" (from the Italian and Spanish "spring") in its title, you can be assured that its ingredients and flavors will Ijint of spring. This is such a dish, including, among other vegetables, two of spring's greatest offerings-asparagus and snap peas.

  • By Susan Maslowski The Putnam Farmers Market is now open on Thursdays from 3:30 to 7 p.m. and Saturdays from 8 a.m. to noon at its new location in Hurricane City Park. This is the ideal time of the year to prepare Pasta Primavera. Since the name primavera means spring, the vegetable choices for this dish are best when they come directly from the garden. Now is the time to gather the last stalks of asparagus and pick the first snow peas, broccoli, carrots, cauliflower and zucchini for this seasonal entre. Add some fresh shiitake mushrooms, green onions and snipped basil for an aromatic touch. There are many recipes for Pasta Primavera, an Italian- American dish that consists of pasta and fresh vegetables. The classic primavera sauce contains garlic sauted in olive oil, finished with Par...

Bonnie: The good thing about these new Knorr Sides Plus is that each pouch contains two servings of vegetables. At least that's what the manufacturer assures me; it looks like lots less. Knorr says that it measures "the appropriate amount of vegetables per cup. ... Because the vegetables are dried, they take up less volume than their fresh counterparts. Knorr also touts "no artificial flavors or trans fats." That is true, but these Sides are loaded with flavor enhancers (MSG, disodium ...

  • Bellwether Farms was started by the Callahan family initially as a lambing business; sheep's milk cheese was a secondary operation that came later. In addition to the line of sheep's milk cheeses, the Callahans make several cow's milk cheeses using their neighbor's Jersey milk. One of the most unusual of these is the Crescenza. It is like Teleme in that the consistency is very runny, almost as if it's melting. The texture is also silky and smooth and the taste is creamy with a mild tanginess. It is a wonderful cheese to melt over things, such as veal parmigiana or pasta primavera; spread on a sandwich with fire-roasted red pepper and fresh tomato; or ooze under a spring salad with greens, warm roasted potatoes and cooked asparagus. This cheese is compatible with many fresh fruits ...

  • The menu promises "simple, yet classic, with a twist." What this means in practice is a thoughtful elaboration upon the traditional bar-and-grill offerings of burgers, fries and wings. Each menu section features "Over the Counter" and "Prescription Only" items, roughly corresponding to standard-issue dishes and chef's specialties. Angelique's pasta primavera struck a similar note. "Seasonal veggies" turned out to be tomato and well-sautéed green pepper and onion (no zucchini? no red peppers? no summer squash?). Similarly, "Genovese pesto and sun-dried pesto drizzle" was more like a light herbal vinaigrette than the densely flavored paste we associate with pesto. Its slight vinegary tang was refreshing on a sultry summer night, but Angélique thought she had ordered a dish that would show...

  • There's more to it than that. I say there's something delicious about food that is, well, found. And sort of snitched. Not like Cheetos found on the ground in the park (though my toddler would beg to differ) but found as in olives from the olive bar at Whole Foods and chocolate truffles at Wild Oats or even stale bread and pungent cheese or chips and salsa at any old market sample platter. If I'm hungry and haven't reached yet for my wallet and I come upon some free food on a platter, like a mirage in a desert, I'm digging in (and others are, too) and enjoying it more than if I had chosen it myself, stood in line holding it, paid for it and taken it home. At my house, we run out to the store when we need leeks, even though we have onions. Or when my husband makes his pasta primavera alf...
