  • I always thought it odd that Oktoberfest starts in September, but after visiting the world-famous festival and its host city of Munich a few years ago, I understand why the Germans just couldn't wait another month for the party to begin. Billed as the largest public festival in the world, Oktoberfest 2008 kicks off Sept. 20 with the Grand Entry of the Oktoberfest Landlords and Breweries, a 1,000-person parade featuring decorated floats, beer maidens and traditional brass bands. At noon the Lord Mayor will tap the first barrel of beer, and by the end of the 16- day festival 6 million revelers will guzzle almost 2 million gallons of Bavaria's best brew.

  • We can thank Crown Prince Ludwig and Princess Therese of Bavaria for the Oktoberfest celebrations that take place this time of year. The first Oktoberfest was not really a festival at all, but the public celebration of their wedding," says Lucy Saunders, author of a Web site, Beercook.com, and five cookbooks, including "Grilling with Beer" (2006) and "Cooking with Beer" (1996).

  • A hogshead is a huge cask capable of holding 54 gallons of beer. A hog's head is what's staring at me from a smoker at the Beer, Bourbon & BBQ Festival at National Harbor near Washington. Attendees are ripping off succulent chunks of pork from the piggy's remains. Which of about five dozen beers being served at the event would be a proper pairing? I guess that a Belgian sour red ale might have some affinity with the Carolina-style, vinegar-based barbecue sauce. A few stations away, volunteers are pouring a vintage 2008 Vintage Oak Aged Rodenbach, a classic with tart cherry flavor, caramel malt sweetness and tannic bite in the finish. But the acidity of the beer and the sauce gang up to drown out the other flavors.

  • October seems an ideal time to explore German cuisine, specifically Oktoberfest fare. I thought I'd look beyond bratwurst and beer, so I called my friend Martina Hart, who grew up in L nen, in northwestern Germany, for some guidance on alternative Oktoberfest menus. She kindly explained that Oktoberfest is traditionally celebrated outdoors, sort of like a great cookout, and that bratwursts and knockwursts are standard fare. The first festival was held in 1810 to celebrate the marriage of Bavarian Crown Prince Ludwig to Princess Therese von Sachsen-Hildburghausen. The tradition continues every year.

  • Spaten's Oktoberfest is a perfectly balanced amber. They actually claim they brewed the original "marzen beer." This "big 6" Munich brewery is taking lead sponsorship at Philly's Oktoberfest on September 27th at the Armory on 23rd St. If Festgoers in Munich drink 14,668,099 pints and consume 284,506 pork sausages, we've got our "work" cut out for us. Buy tickets at www.phillybeerfests.com. $2.35 This is one of the lighter German Oktoberfests. It's more of a Helles. People often ask me, "What the hell is a Helles?" Here you go: It's a medium-bodied golden lager with a great bready nose and German Noble Hops. A pint or two or three of heaven. $4.60 (16.9 oz)

  • Both Spaten Oktoberfest Ur-Marzen and Paulaner Oktoberfest Märzen Amber are the real deal and will be poured in the beer tents in Munich. The Spaten is exceptionally smooth and well balanced with a nice citrus zing playing against the racy matt. It's soft on hops, giving just the slightest bite to this appealing brew. Spicy matt and a light hit of hop aromatics mark the Paulaner. There's not a hint of bitterness from those hops, but they do have a drying influence that helps to balance the sweet malt. A nice round finish with lightly toasted grain adds texture and flavor to make this one worthy.
