Oktoberfest officially ended Sunday, but the traditional foods served during the celebration (sauerkraut, spaetzle, pork schnitzel and Polish sausage) are welcome dinner dishes for cooler evenings. I picked up some authentic recipes and preparation tips from Alec Schrader, executive chef at The Club at Flying Horse, during a recent cooking class.

Organizers have thrown a few new wrinkles into this weekend's Dayton Art Institute Oktoberfest, but they're not about to mess with the festival's basic formula for success: beer, food, wine, arts, entertainment and ... did we mention beer? Those swept up into the Oktoberfest spirit will have their choice of 28 or so brews, everything from ol' reliable Miller Genuine Draft to Weihenstephaner Hefeweissbier from the oldest continuously operating brewery in the world. October seems an ideal time to explore German cuisine, specifically Oktoberfest fare. I thought I'd look beyond bratwurst and beer, so I called my friend Martina Hart, who grew up in L nen, in northwestern Germany, for some guidance on alternative Oktoberfest menus. She kindly explained that Oktoberfest is traditionally celebrated outdoors, sort of like a great cookout, and that bratwursts and knockwursts are standard fare. The first festival was held in 1810 to celebrate the marriage of Bavarian Crown Prince Ludwig to Princess Therese von Sachsen-Hildburghausen. The tradition continues every year.
RANCHO CUCAMONGA -- The Rotary Club has jumped on the food truck bandwagon. Sunday, the local service organization will host a family- friendly Oktoberfest Food Truck Festival at Etiwanda . The event will feature six food trucks, a beer garden and an Oom Pa Pa band.
SOUTHWEST HARBOR - Maine's Oktoberfest will be held rain or shine 11:30 a.m. to 6 p.m. Saturday, Oct. 11, at Smuggler's Den Campground on Route 102. The festival will showcase 22 of Maine's microbreweries, two Maine wineries, 12 international food booths, and 35 Maine craft booths. Continuous music and entertainment will be provided by the Mainely Country Band and the Blueboys Revue.
Oktoberfest in Germany is officially over, since it began at the end of September and ran through the first weekend in October. If schedules or budgets precluded a trip to Deutschland this year, Oktoberfest enthusiasts can still recreate an authentic Oktoberfest experience at home. Food served during Oktoberfest consists of hearty fare. Whole chickens are grilled on a spit and roasted meats are served with red cabbage, sauerkraut or potato dumplings. Traditional German rouladen often appear as a seasonal specialty on restaurant menus. They make a fine comfort food for a cool autumn afternoon or evening meal.
