Honey's yummy, but molasses' rich, bittersweet essence has a darker, more potent allure. Although a far cry from molasses staples of baked beans and brown bread, today's molasses-rich recipes rely on the same flavor- and moisture-enhancing qualities that have made the ingredient a mainstay for generations. You can make a lot of tasty dishes with raisins. I learned this last Wednesday at the fifth annual Iron Chef Mizzou competition. Raisins were the featured ingredient at the competition at the MU Student Center. I was among three judges very pleased to taste the 11 dishes made by the four competing teams. Even though I am a self-confessed food snob, there are some items that I will buy rather than make because the effort is disproportional to the reward. Puff pastry is one example; cappuccino is another. Puff pastry requires a lot of time and elbow grease, and a good cappuccino requires both equipment and skills that I don't possess. About halfway through the marmalade fiasco, as I was stirring yet another bubbling pot for hours in order for it to reach the "gel point," I began to question my equipment. Most canning books instruct using a stainless steel or enameled pot for cooking the jam because aluminum reacts with the acid in the fruit and could affect how the jam gels or create an off-color or flavor.
