AINSWORTH, Neb. - In this Great Plains ranching town, cowboys still lasso steers as part of their daily routine and cattle producers like Bob Sears still take pride in the long tradition of raising American beef.
But Sears and many other ranchers say the market for domestic meat has withered to the point where they often receive only a single reasonable bid for their animals - a trend that could eventually mean lesser-quality meat on dinner tables across the nation.

The chicken conspiracy
I'm certain George W. Bush or Barack Obama did it - or must have done it - or schemed to do it for donations to their election campaigns or somehow convinced the meat producing industry to add water and other things to their products. I know a culprit when I see one.

Launched 25 years ago as AVA Pork Products Inc., the Hicksville company (now serving a variety of pork and beef products) has carved its way into one of America's busiest markets - a $160 billion meat and poultry industry that, according to Washington, D.C.'s American Meat Institute, has an $832.4 billion "economic ripple effect" analogous to 6 percent of the nation's entire gross domestic product. Reaping the benefits are both national distributors and regionalized manufacturers like AVA, which services grocery chain and specialty store customers along the east coast from New York to the Carolinas.

LOS ANGELES -- As she does most every weekend, "Bones" star Emily Deschanel is spending her Sunday morning shopping at a Hollywood farmers' market near her home.
A strict vegan, she has avoided all animal products for 15 years, ever since watching a documentary about the meat industry. Her lifestyle extends to avoiding leather clothing or consuming even honey because "sometimes," she says, "they kill the bees." As a result, she is forced to forgo many samples along the route.

The Food Safety and Inspection Service (FSIS) is delaying the effective date of the final regulations that require nutrition labeling of the major cuts of single-ingredient, raw meat and poultry products and ground or chopped meat and poultry products that were published in the Federal Register on December 29, 2010. The original effective date of these regulations was January 1, 2012. FSIS is taking this action in response to a request from eight trade associations. The trade associations requested that FSIS exercise enforcement discretion for a six month period following the January 1, 2012, effective date of the final rule. However, FSIS has concluded that a two month delay in the effective date will allow industry sufficient time to comply with the requirements of the final rule. The...
