Sometimes a pig is just a pig. But when a California law requires meat manufacturers to euthanize non-ambulatory pigs and other livestock before they can be slaughtered for processing, it takes the U.S. Supreme Court to decide the meaty issue of whether that state statute is preempted by federal law. The case of National Meat Association v. Harris involves a suit by a national association of meat packers and processors challenging California Penal Code [section]599f, which prohibits the slaughter of non-ambulatory livestock for human consumption. The law requires that downed livestock be immediately euthanized. Violation of the law is punishable by up to a year in prison and a $20,000 fine.

Its after-hours on a weeknight in early April at Three Little Pigs Charcuterie & Salumi, the new charcuterie in Washington. Yet its spotless, cool workroom below hums with activity. The 27-year-old chef, who opened the small shop in March with his fiancee, chef Carolina Gomez, is midway through breaking down a 200-pound Old Spot from Evensong Farm in Sharpsburg, Md. After the evenings work, Story will spend days and weeks smoking, salting and curing pork...
