  • AT FIRST there were dozens. Then there were just four. And for a brief time, it looked as if there would be only three. Indeed, it's been a struggle for southern Colorado to hang onto its goat dairies, which sprang up when Italian immigrants who came to work in the region's mines in the early 1900s. In their heyday, 30 to 40 dairies supplied them with Italian-style goat cheese -- a hard cheese and a soft ricotta, both very different in taste and texture from the more familiar French chevre.
