"It's almost as if the word 'garnish' has evolved," said Chris Styler, a Jersey City consulting chef who authored the food presentation cookbook "Working the Plate." "It went from something that's thrown on the plate at the last minute to spruce it up, to ... chefs thinking about the finished look of the plate" as they conceive the entire dish. "If you do it right, that overall look and all its components is what gives you a beautiful plate, not something that's thrown on at the end.
