Galicia is green. In stark contrast to most of Spain, where relentless summer sunshine leaves the landscape dry and arid, this semiautonomous area in the northwest corner of the country receives plenty of rainfall.
The hills and vales near the Atlantic coast, where narrow ocean inlets called rias carve their way inland, make the region very green - sometimes because of dense forests but sometimes because of lush vineyards.

This is why Ramon Diaz got into the restaurant business: "We were sick of three-pound steaks and six-pound lobsters and three-pound paella.
His family hails from the region in Northwest Spain known as Galicia, and had always looked with disgust on what generally passes for Spanish restaurant cuisine in the United States: "big, big, big, cheap, cheap, cheap." They longed for the true Spanish dishes, made the way they are in Galicia and in the Basque country of Spain.

Burp! Excuse me - that was piggish of me. Oops, excuse me again, that was pun-ish of me. Sorry, but apparently this book has given me a case of humorous indigestion. All I want to do is eat, travel, laugh, sleep (briefly) ... and then start all over again
John Barlow, a Brit who has lived in Galicia, Spain's northernmost province, for quite some time, is a devoted foodie. But he's not one of those dilettantes who write about the preparation and consumption of food as if it were a secret art known to and practiced by a very select few. He's a gourmaniac who clearly loves eating as much as he does writing - one of his earlier books is called "Eating Mammals" - and combines those two passions with delightfully evocative results for the reader.

The botafumeiro, the 175-pound silver incense burner, swings from side to side across the altar through the transept of the enormous Cathedral of Santiago de Compostela, almost touching the vaulted ceiling. Far below, the officiating priests distribute the host to the worshippers, and a clear-voiced soprano sings "Jerusalem." It's an exquisite moment in time, a merging of medieval traditions and contemporary faith.
Santiago de Compostela in Spain's northwestern province of Galicia was one of the three great pilgrim shrines of the Roman Catholic Church, third only to Rome and Jerusalem in importance.

Until the denomination of origin (DO) was created in 1988, the fresh white wines of the Ras Baixas were little known beyond the seaside villages of Galicia in northwestern Spain.
They were local wines mostly made from the exotic Albario grape that worked beautifully with the local cuisine, particularly the sweet baby clams, oysters and octopus sold by the fishermen of the region.
