With its vibrant health food scene, robust organic farming sector and tradition of self-sufficiency, Maine can easily be viewed as an oasis of natural eats.
However, the wider world does creep into our local affairs, meaning it never hurts to occasionally take a peek at the latest national and international food happenings. The outlook for commodities important to farmers in the Midwest is sound, although uncertainty over the farm bill is clouding predictions about the future of agriculture. That was the message from Richard Pottorff, an economist with St. Louis, Missouri-based Doane Advisory Services. Although organic farming remains a small sector of Maine's overall agriculture production, the study shows that organic farms are rapidly increasing, with 339 certified in 2008 and 582 selling organic products just a year later.

In an informal survey last week of dozens of agricultural representatives, some simply said "Clone Bob Spear," while others addressed the issues of sprawl, biotechnology, regional and national marketing.

Well, maybe not that fast. But according to 34-year-old dairyman Abe Collins, who co-manages the operation with Yandow, "carbon farming" could be the next big strategy for combating global warming the subject of [Al Gore]'s Oscar-winning film An Inconvenient Truth. Like global warming, "carbon farming" requires some patience to understand. But, says Collins, the practice holds the potential to neutralize Vermont's "carbon footprint" - shorthand for "shlock we spew into our atmosphere." He also claims it could give a significant economic boost to the state's agricultural sector.
How does this "carbon farming" operation work? Well ... it doesn't yet - Collins and Eric Noel co-founded the group Carbon Farmers of America in late 2006, but none of their 14 co-members will turn a profit until...
