Cream of tartar is an acidic powder, which is usually mixed with a base, such as baking soda. When these products are combined in a liquid they create carbon dioxide bubbles. Formation of these small bubbles causes baked products to rise and be tender.

Dear Heloise: Thank you for your wonderful hints in The (Harrisburg, Pa.) Patriot-News. I read your hint on how to clean the interior of aluminum pans. I have pans with dark interiors from cooking things such as asparagus, etc., and they need a good cleaning. Please help!

More than 20 pounds of hard candy is used for the finishing touches.

A:You can use a ready-made wax stripper like Armstrong Genuine Floor Stripper, or make a homemade stripper that also works well by adding one cup of cream of tartar to a gallon of white vinegar. Test any stripper first on an inconspicuous area of the floor to make sure it doesn't damage the linoleum. Also, before beginning wax removal, you should clean the floor as thoroughly as possible to remove dirt and dust. If vacuuming or sweeping doesn't appear to get the floor clean, damp mop it.

Using electric mixer, beat butter, oil, sugar and powdered sugar well blended. Mix in egg and vanilla. Sift flour, baking soda, cream of tartar and salt over and mix in. Cover mixture and chill until firm, about 30 minutes. Preheat oven to 350∞F. Butter 2 heavy large baking sheets. Roll 1 tablespoon dough into ball. Place on prepared sheet. Repeat with remaining dough, spacing balls evenly on sheets.

Dear Dr. Gott: Seven years ago, I was diagnosed with peripheral neuropathy due to numbness on the bottoms of both feet. My podiatrist made the diagnosis.
