Last Wednesday's responses to Rhonda Banks' request for a cream cheese pecan pie recipe were similar to each other, although one used dark syrup and the other light, one used 1/2 cup pecans and the other 1 cups. Today's responses kick it up a notch.

What is up with cream cheese? The woman wondered about it. Since cream cheese is made from milk why does it have so little calcium? If milk is a major source of calcium, why is cream cheese so low?

Forget gold, frankincense and myrrh. Bring on the cream cheese, eggs and sugar. We would venture to guess that if the three wise men had lived in the era of cheesecakes, they would have whipped up this luscious dessert as a gift, much as people do these days for the most deserving on their holiday list.
The great thing about cheesecakes is how deceptively easy they are to make. Essentially, cheesecake is a custard, a delicious combination of cream cheese, eggs and sugar -- at least for the sinfully rich New York-style cheesecake that's a staple at delis everywhere. Other versions use ricotta or cottage cheese, or even Swiss or cheddar for a savory cake.

The mystery is that I haven't eaten here sooner, and it's a mystery for two reasons. First, I'm one of those obsessives who think the perfect sandwich is the perfect meal, especially in summer, when you don't want to sit down to a steaming heap of food.
