But there is some confusion about what counts as a whole grain. By definition, a whole grain is a grain that contains the entirety of its parts. If you were to look at a cross-section of a grain kernel, you would see three layers: the bran on the outside, the germ in the middle and the endosperm in the center, which is the starchy part of the grain. Whole grains contain a variety of essential nutrients, plus fiber and potent phytochemicals and antioxidants. Refined grains that have been stripped of the bran and germ layers -- white flour and white rice, for example -- lack many of these important substances.
