He worked as a computer programmer/analyst for 33 years and retired from the Children's Hospital of The King's Daughters. Mr. Stallings was past president of Data Processing Management Association, Tidewater Chapter, past president of the Virginia Camellia Society, and was a member of South Norfolk Congregational Christian Church. Faced with the prospect of carving 50 turkeys over two days, Dean Lex grins and shifts his thinking from bits and bytes to birds and bites. A computer programmer-analyst, Lex has volunteered once a week for the past 20 years for the St. Benedict Community Meal, which serves some 400 people every night but Saturday. That number can swell on holidays such as Thanksgiving, when a traditional meal with trimmings is served from 2 to 3:30 p.m. In recent years, Lex also has become the go-to guy for Thanksgiving turkey carving, spending several hours slicing and deboning the meat on Tuesday and Wednesday before the holiday.
