The Long Island restaurant and catering industry is off by 25 percent in the past year, and that has eatery owners scrambling for new recipes for success. Take a tale of two Wednesdays at the bar.
OCEAN SPRINGS, Miss. - Hurricane Katrina has spawned a new industry, catering to the tens of thousands of families still crammed in government-issued trailers 10 months after the storm. Teams of architects and builders are racing to design, construct and sell creations like the Katrina Cottage and Coastal Cabana, billed as comfortable, durable and affordable alternatives to the flimsy trailers furnished by the Federal Emergency Management Agency.
Large, on-premises catering operations for now are enjoying a respite from such challenges, though fuel surcharges from food suppliers may be passed on. "A stand-alone catering hall or someone who doesn't do the volume that we do might have those problems," says Amy Elizabeth Sukiennik, manager of catering and special events at the Westminster Hotel in Livingston. Off-premises caterers, on the other hand, may not need to pay for a venue's overhead but face the double-whammy of steep gas prices for transporting food-and clients that are holding back on spending for premium items, such as lobster.
