  • I have a new cast iron grill pan. I see you often use one on your show, and was wondering if you could suggest the best way for me to use mine. I have an electric cook top and I always see you use your grill pan on gas. Please advise and many thanks. - Adam C. You may have heard the term misery loves company. Well scoot over on the couch because I have an electric cook top too. That gas cook top you see me using? Unfortunately, it's in the TV studio kitchen and not at my house.

  • It's been a busy week for SCHOP! this week with weekly clients, small home events and trying to have a little personal fun myself. However, it was all very "Celestine Prophecy" there is no such thing as coincidence. It started when I went to my homegirl Dane's potluck birthday party. It's the best because we all bring something and try to outdo the next one. It's comedy really. At the behest of the birthday girl I just brought a Carvel cake (which are fabulous with those little crunchies). Marj brought her marinated Asian apricot wings, Lisa her baked beans, Nichelle her potato salad and Shena whipped up a delicious salad of arugula, pistachios, tomatoes and dried cranberries.   • This past weekend, SCHOP! had a client event in Harlem. It was called a "BBQ Graduation Party." I menuplanned all of the items I was going to put on the grill; however, when I went over for the initial consultation, there was no grill. Plan B: Bring my trusty cast iron grill/griddle and work that oven to the ground! For dessert, [Bryan] made cupcakes, chocolate and vanilla, with butter cream frosting and peach cobbler. And I can't forget about my favorite Bryan-creation: his lemon chiffon that starts with his amazing fresh lemon curd, mixed with organic (Bryan wouldn't have it any other way) whipped cream.   • Ah the panini. As a chef, I think of them basically as toasted cheese sandwiches. A panini sandwich is cooked between two "clamshell style" cast iron grill grates called a panini grill which leaves these beautiful grill marks on the bread. Served at upscale coffee shops and cafes everywhere, the panini sandwich has taken this country by storm. Crunchy buttery bread on the outside, fillings like roasted beef, turkey, ham, grilled vegetables and cheese welcome your taste buds with every bite.   • Iranians of all sects begin their New Year on March 21, the day known as Noruz. Preparations are made weeks ahead: seeds (usually lentils or kernels of wheat) are planted in pots to produce the first sprouts of the season, new clothing is purchased and decorative cloths are chosen to be spread on carpets or tables. Three days before the equinox a formal display known as haft-sinn is created. It is a collection of seven foods-all beginning with the letter "s"-and symbolic objects such as eggs, coins, candles and mirrors, live goldfish in bowls and a fragrant flowering plant. The holiday lasts for 13 days, with bonfires and picnics, games and family gatherings. Dinner consumed on March 21 is rich with meats in stews, meatballs, and grilled bits and always there is sabzi pollo, rice cooked...

  • Combine all of the ingredients in a large bowl with your clean hands and shape in to patties. Balsamic burgers will taste the best if you can grill them. If you do not have a grill, invest into a cast iron grill pan. (You can find a great one very inexpensively at Kmart for about twenty dollars.) Burgers also taste great fried in a pan. Just cook the burgers on each side for about 5 minutes for a medium well burger!

  • Remove skin from duck and cut breast in half. Combine all spice rub ingrethents. Render duck skin in heavy skillet over medium heat until most of fat is melted. Blend two tablespoons duck fat into spice rub and rub all over both sides of duck. Set aside. Heat large cast iron skillet or grill pan over medium high heat until very hot. Rub wim some of me duck fat (use a paper towel). Sear duck breast on both sides, then lower heat slightly and continue to cook for total cooking time of 12-15 minutes, just until duck is no longer pink in center. Remove duck to plate and let stand for five minutes. Keep grill pan hot. Make cranberryjalapeno Sauce. Start by soaking dried cranberries in red wine until the cranberries are plump.   • For many people, the most popular way to prepare corn on the cob is to dip it into boiling water. However, I've come to appreciate roasting corn, which seems to intensify its flavor. Roasting can be done on the grill, in the oven or in a cast-iron skillet on the stove.   • Now that Memorial Day has come and gone, let the summer grilling season officially begin! Not that we haven't already been searing all sorts of goodies over an outdoor flame, despite all the rain we've had. But sunnier days are coming (surely?) so it's time to start giving the grill a real workout.
