For too many of us, making bread belongs in the same category as public speaking and bungee jumping. The condition could be listed in a diagnostic manual of phobias: Bread-Making Failure Disorder, characterized by an extreme aversion to kneading dough and/or a fear of producing loaves with the texture of rubber, the weight of granite and the aroma of burnt fiberboard.
OK, even if the comparison to bungee jumping is a leap, the dread over bread is real. In this modern age of too little time and too many tasks, working with dough has acquired an almost mysterious air, something that seems better left to bakers with an artisanal touch.

The price of bread is skyrocketing along with everything else. When my favorite walnut bread costs $6 at the bakery but I can make a similar loaf at home for about 60 cents, it's time to pull out the old bread machine.
Back when bread machines were the rage, European-style specialty breads weren't available at every supermarket and bakery in town. But as baguettes, boules and batards became common, I rarely used my bread machine any longer. But now cleaning up a bit of flour and waiting for dough to rise in the bread machine seems worth my time.

I previously mentioned this month's columns contain recipes suitable for Thanksgiving. Bread is one component of the meal you can't be without, whether it's your traditional cornbread, mile- high hot rolls or something from that "fluffy doughboy's" refrigerated arsenal.
Panettone is a tall, cylindrical-shaped Italian coffeecake, flecked with fruit, akin to the German stollen. It can be described as a "bread." Giada De Laurentiis on the Food Network once made French toast from sliced panettone.
