Not all butterflies flirt with flowers. Some of summer's butterflies are more at home in an oven or on the outdoor grill. These butterflies are thick and tender roasts. Cut almost in half, hinged, and opened out, their surface area is doubled and each side of the meat mirrors the other - like butterfly wings. In my opinion, a great boned and butterflied grilled leg of lamb deserves the title of monarch of the butterflies. This rare, juicy cut, fragrant with garlic and rosemary and occasionally crunchy with bits of grilled fat, is king. But lamb isn't the only meat suited for butterflying. Any large boneless roast is appropriate. Whether grilled, roasted, broiled, or sauteed, butterflied meat cooks faster and more evenly than when it is the shape that nature or butcher began with.

News and notes: Helping hand: Enid Lake's annual Habitat Day is set for Feb. 5 when volunteers will help restore the lake's habitat.
